Recipe for Low-Fat Piña Colada Pudding
- Cottage Cheese 2% – 450g
- Cool Whip Lite – 75g
- 1 Can, Pineapple, Drained – 349g
- Jello SF Pudding, Vanilla – 14g
Toppings
- 3-5g of dark chocolate chips (make it high quality)
- 3-5g of coconut chips, unsweetened
- Blend the cottage cheese, pineapple, and pudding mix together to make it “smooth” (Pineapple bits will still be apparent)
- Fold in Cool Whip Lite.
- Chill in the refrigerator.
- Serve topped with dried unsweetened coconut and a couple of mini chocolate chips.
