Recipe for Low-Fat Piña Colada Pudding

Ingredients
  • Cottage Cheese 2% – 450g
  • Cool Whip Lite – 75g
  • 1 Can, Pineapple, Drained – 349g
  • Jello SF Pudding, Vanilla – 14g

Toppings 

  • 3-5g of dark chocolate chips (make it high quality)
  • 3-5g of coconut chips, unsweetened
Method
  1. Blend the cottage cheese, pineapple, and pudding mix together to make it “smooth” (Pineapple bits will still be apparent)
  2. Fold in Cool Whip Lite.
  3. Chill in the refrigerator.  
  4. Serve topped with dried unsweetened coconut and a couple of mini chocolate chips.
  5. Enjoy!
