Blueberry Protein Baked Oats
Oatmeal you can slice. A whole tray of vanilla-cinnamon baked oats studded with blueberries and toasted almonds, with whey and Greek yogurt quietly tripling the protein of normal baked oatmeal. Bake it Sunday, eat warm squares until Friday.
Method

Preheat the oven to 180C / 350F and grease a 20cm / 8-inch square baking dish.

Stir the oats, protein powder, baking powder, and cinnamon together in a large bowl.
💡 Tip: Break up any protein powder clumps now. They do not dissolve later. -
Whisk the eggs, yogurt, milk, maple syrup, and vanilla, then fold into the dry ingredients.

Fold in most of the blueberries, pour into the dish, and scatter the rest on top with the almonds.

Bake 30 to 35 minutes until set at the center and golden at the edges. Cool 5 minutes before slicing into 6.
Notes
Whey blends smoothest here. A plant protein works but firms the texture, so add an extra splash of milk.
Frozen blueberries go in straight from the freezer. No thawing, or they bleed purple through the batter.
It is done when the center barely springs back. Overbaked oats are dry oats.
A square, microwaved 60 seconds with a spoon of yogurt on top, is the move.
