High-Protein Breakfast Tacos

Soft scrambled eggs stretched with whites, browned breakfast-spiced turkey, and melted cheddar in warm corn tortillas with fresh pico. Two tacos make a 390-calorie breakfast with 31 grams of protein — weekend food that behaves like a training-day meal.

Method

  1. Mix the diced tomatoes, red onion, cilantro, lime juice, and a pinch of salt. Set the pico aside.

  2. Brown the turkey with the sage, fennel, smoked paprika, and half the salt over medium-high, breaking it into crumbles, 6 to 7 minutes. Push to one side.

💡 Tip: Let it catch color. Pale turkey is the difference between sausage-y and sad.
  3. Whisk the eggs and egg whites with the remaining salt. Pour into the pan over medium-low and scramble slowly into soft curds, folding the turkey through at the end.

  4. Off the heat, scatter the cheddar over to melt.

  5. Fill the warm tortillas with the scramble and top generously with pico. Lime wedges and hot sauce at the table.

Notes

The sage-fennel-paprika rub is our freezer-burrito sausage trick. It makes plain ground turkey taste like breakfast sausage.
Low and slow on the eggs. Soft curds beat rubber every single time.
Warm the tortillas in a dry pan or straight over the flame. Cold tortillas crack.
The pico is doing real lifting — do not skip it.

Frequently Asked Questions

How do these hit 31g of protein?

Three stacked sources: whole eggs for richness, egg whites for volume, and the spiced turkey crumbles — the same architecture as our freezer breakfast burritos, in taco form. A typical cafe breakfast taco pair runs similar calories with half the protein.

Can I meal prep them?

The scramble keeps 3 days refrigerated and reheats in 60 seconds; keep the pico and tortillas separate and assemble fresh. For a true grab-and-go version, our Freezer Breakfast Burritos are the same flavors built for the freezer.

Flour or corn tortillas?

Corn is the default here for flavor and macros — about 55 calories per small tortilla against 90 to 140 for flour. If you switch to flour, the pair of tacos climbs roughly 100 calories; a low-carb wrap splits the difference.
