Date Night Chicken Marsala

The restaurant classic at home: golden chicken cutlets in a glossy marsala-mushroom pan sauce that tastes like it took far longer than 35 minutes. One knob of butter where a restaurant uses four, 43 grams of protein, and a sauce you will want bread for.

Method

  1. Season the cutlets and dust all over with the flour, shaking off the excess.

  2. Sear in the oil over medium-high, 3 to 4 minutes a side until golden and just cooked. Remove.

  3. Add the butter and mushrooms to the pan and cook hard for 5 minutes until browned. Add the onion for 2 minutes, then the garlic for 30 seconds.

💡 Tip: Browned mushrooms, not sweated ones. Color is flavor in this sauce.
  4. Pour in the marsala and bubble 1 minute, scraping the pan. Add the broth and thyme and simmer 3 to 4 minutes until glossy and slightly thickened.

  5. Return the chicken with its juices for 2 minutes, spooning the sauce over. Finish with parsley.

Notes

Dry marsala, from the wine aisle rather than the 'cooking wine' shelf, makes a noticeably better sauce for the same money.
Butterfly and flatten the chicken so it cooks fast and stays juicy. Thick breasts overcook outside before the middle is done.
The light flour dusting on the chicken is what thickens the sauce. No cream needed.
Serve over mash, pasta, or greens. Macros are the chicken and sauce only.

Frequently Asked Questions

Does the alcohol cook off?

Most of it — a few minutes of hard simmering burns off the majority and leaves the caramel-nutty flavor that defines the dish. For a fully alcohol-free version, use extra broth with a teaspoon of balsamic; different, but still excellent.

What makes restaurant marsala so much heavier?

Butter, mostly — classic recipes mount the sauce with several tablespoons at the end, and many add cream. Here the flour dusting does the thickening, so one 15g knob of butter is purely for flavor, and the plate drops to 360 calories.

What should I serve it with?

Our Creamy Garlic Mashed Potatoes were built as this dish's partner — combined they make a 570-calorie restaurant plate. Zoodles or green beans keep the whole dinner under 450.
