Chicken Satay with Peanut Sauce
Grilled Thai-style skewers in a curry-soy marinade with a real peanut dipping sauce, measured so the macros behave. Works as a party platter or a dinner over rice — either way it is 335 calories and 43 grams of protein before the sides.
Method
-
Whisk half the soy, the curry powder, two-thirds of the ginger and garlic, half the honey, and half the lime juice. Toss with the chicken and marinate 30 minutes or overnight.
-
Thread the chicken onto skewers, laying each strip flat.
-
Whisk the peanut butter, remaining soy, honey, ginger, garlic, and lime juice with the sriracha, adding water until the sauce pours slowly.
💡 Tip: It thickens as it sits. Err on the loose side. -
Grill or broil the skewers on high, 3 to 4 minutes a side, until charred at the edges and cooked through.
💡 Tip: High heat, close to the element. Satay without char is just chicken on a stick. -
Pile onto a platter with the sauce, cilantro, and lime wedges.
Notes
Marinate at least 30 minutes; overnight is better and makes this a prep-ahead party dish.
Thread the chicken flat and snug so it chars evenly.
The peanut sauce is deliberately portioned — peanut butter is the calorie center of this dish.
Soak wooden skewers 20 minutes or they arrive at the table on fire.

Frequently Asked Questions
Grill, broiler, or air fryer?
All three work: grill for the real smoky version, broiler on high as the year-round default, or air fryer at 200C for 9 to 10 minutes. The marinade's honey is what catches into char either way.
How do I serve it as a party appetizer vs dinner?
As an appetizer, cut the strips shorter for 20 mini skewers and the batch serves 8 at about 170 calories a pair. As dinner, serve over rice with cucumber — 60g dry jasmine per person adds roughly 215 calories.
Is peanut sauce compatible with tracking?
Measured, absolutely. This whole batch of sauce uses 60g of peanut butter — about a third of what takeout satay sauce portions run — and the curry-lime marinade means the chicken is not relying on the sauce for all its flavor.
