Sheet Pan Chicken Shawarma Bowls
Street-cart shawarma flavor from one oven tray: chicken breast in a deep cumin-turmeric marinade roasted hot alongside red onion, piled over rice with cucumber, tomato, and a lemony yogurt-tahini sauce. A complete meal-prep bowl at 44 grams of protein.
Method
-
Toss the chicken with the oil, all the spices, salt, and half the lemon juice. Marinate 15 minutes while the oven heats to 220C / 425F.
-
Spread the chicken and red onion wedges on a large lined sheet pan in a single layer.
-
Roast 18 to 22 minutes until the chicken is cooked through with charred edges, tossing once.
💡 Tip: If the edges have not caught by the end, 2 minutes under the broiler finishes the job. -
Meanwhile cook the rice, and whisk the yogurt, tahini, garlic, and remaining lemon juice with a splash of water into a pourable sauce.
-
Build the bowls: rice, chicken and onions, cucumber, tomatoes, a generous drizzle of sauce, and parsley.
Notes
The spice load is deliberately heavy. Shawarma is a seasoning-forward food and timid spicing reads as plain chicken.
Roast at a high temperature so the edges catch before the chicken dries.
Everything holds separately for 4 days, which is why this is a meal-prep anchor.
Swap the rice for extra salad and the bowl drops about 150 calories.

Frequently Asked Questions
What makes it shawarma without the spit?
The marinade. Cumin, coriander, turmeric, cinnamon, and paprika are the signature shawarma profile, and the high-heat sheet pan recreates the charred edge shavings that make the spit version so good.
How does it meal prep?
Chicken, rice, and sauce in separate containers hold 4 days. Keep the cucumber and tomato whole until the day you eat them and the bowls taste freshly made all week.
Can I use chicken thighs?
Yes, and they take the char even better. Trimmed thighs add roughly 4 grams of fat and 40 calories a serving, which is a fair trade if you prefer them.
