Chorizo Egg Bites
Fluffy eggs, smoky chorizo, and melted cheese are baked together into savoury bites with a rich, bold flavour and a satisfying, portable texture. Perfect to make ahead, they offer a quick, nourishing breakfast or snack that packs protein and keeps you full on busy days.
Method
-
Preheat the oven to 180°C and lightly grease a muffin tray.
-
Heat a frying pan over medium heat and cook the chorizo for 3–4 minutes until lightly crisp.
-
In a mixing bowl, whisk together the eggs, milk, salt, and pepper until fully combined.
-
Divide the cooked chorizo evenly between the muffin cups.
-
Sprinkle the cheese over the chorizo, then pour the egg mixture into each cup until almost full.
-
Bake for 18–22 minutes, or until the egg bites are set and lightly golden on top.
-
Allow them to cool for a few minutes before removing from the tray.

Frequently Asked Questions
Can I freeze egg bites?
Yes. Once cooled, freeze them in airtight containers or freezer bags for up to 2 months. Reheat in the microwave, oven, or air fryer until warmed through.
Can I use egg whites instead of whole eggs?
Absolutely. Egg whites will reduce the fat content and raise the protein ratio, though texture will be slightly less rich.
Why do egg bites deflate after baking?
This is completely normal. Eggs puff up in the oven and settle as they cool. For maximum height, let them cool slightly in the muffin tin before removing.
Can I make these in the air fryer?
Yes. Use silicone muffin cups and cook at 160°C for around 10–12 minutes, checking for doneness—look for set eggs and golden tops.
What other cheese or fillings can I use?
Cheddar, Monterey Jack, Pepper Jack, or reduced-fat mozzarella all work well. You can also add chopped spinach, peppers, mushrooms, or spring onions for extra flavour and nutrition.
How long do egg bites keep in the fridge?
Store completely cooled egg bites in an airtight container in the fridge for up to 4 days.
