Method

  1. Preheat the oven to 180°C and lightly grease a muffin tray.

  2. Heat a frying pan over medium heat and cook the chorizo for 3–4 minutes until lightly crisp.

  3. In a mixing bowl, whisk together the eggs, milk, salt, and pepper until fully combined.

  4. Divide the cooked chorizo evenly between the muffin cups.

  5. Sprinkle the cheese over the chorizo, then pour the egg mixture into each cup until almost full.

  6. Bake for 18–22 minutes, or until the egg bites are set and lightly golden on top.

  7. Allow them to cool for a few minutes before removing from the tray.
