Method

  1. Rinse the quinoa thoroughly under cold water.

  2. Add the quinoa and water to a saucepan. Bring to a boil, then reduce to a simmer, cover, and cook for 15 minutes or until the liquid has been absorbed.

  3. Remove from the heat and allow the quinoa to cool.

  4. Add the cooled quinoa to a large bowl along with the cucumber, tomatoes, bell pepper, red onion, feta, parsley, and mint.

  5. In a separate bowl, whisk together the olive oil, lemon juice, garlic, oregano, salt, and pepper.

  6. Pour the dressing over the salad and toss until everything is evenly coated.

  7. Serve immediately or chill before serving.

Notes

The salad keeps well for up to 4 days in the fridge.
If using delicate herbs or avocado, add them just before serving for the best texture.
Swap in your favourite vegetables or protein to customise.
