Method

  1. Heat the olive oil in a large frying pan over medium heat.

  2. Add the onion and pepper and cook for 4–5 minutes until softened.

  3. Stir in the garlic and cook for another minute.

  4. Add the crumbled tofu, turmeric, paprika, cumin, salt, and pepper. Mix well and cook for 5–7 minutes until heated through and lightly golden.

  5. Warm the tortillas according to package instructions.

  6. Divide the tofu scramble between the wraps.

  7. Top with black beans, avocado, salsa, and coriander.

  8. Fold in the sides and roll tightly into burritos.

  9. Serve immediately or wrap and store for meal prep.
