French Onion Chicken Skillet

Everything good about French onion soup draped over seared chicken: deeply caramelized onions, a thyme-scented pan gravy, and gruyere melted under the broiler until it pulls. The bistro flavor without the bread bowl — 385 calories and 47 grams of protein.

Method

  1. Season the cutlets and sear in the oil over medium-high, 3 to 4 minutes a side, until golden and just cooked. Remove.

  2. Add the butter and onions to the pan with a pinch of salt and cook over medium, stirring often, 22 to 25 minutes until deep amber.

💡 Tip: Splash in a tablespoon of water whenever the pan darkens. That dissolved fond is free flavor.
  3. Stir in the thyme and flour for 1 minute, then the broth gradually, scraping the pan, and simmer 3 minutes into a glossy onion gravy. Add the balsamic.

  4. Return the chicken, spoon the onions over, and top each cutlet with gruyere.

  5. Broil 2 to 3 minutes until the cheese melts and spots golden.

💡 Tip: No broiler-safe pan? Lid on for 2 minutes melts it nearly as well.
  6. Serve straight from the skillet.

Notes

The onions take 25 honest minutes. Deep amber is the flavor of the whole dish — pale onions make a pale dinner.
A splash of water whenever the pan catches keeps the fond building without burning.
Gruyere is worth seeking out; it is the French onion cheese. Swiss is the understudy.
An ovenproof skillet goes pan to broiler in one piece.

Frequently Asked Questions

Is this just French onion soup with chicken?

Essentially, and that is the appeal — the caramelized onions, beef broth, thyme, and gruyere are the soup's whole identity. The chicken replaces the baguette raft, which is how a 700-calorie bread-and-cheese bowl becomes a 385-calorie, 47g-protein dinner.

The classic uses wine. Where did it go?

A teaspoon of balsamic at the end does the same brightening job as a deglaze of white wine for zero pantry drama. If you cook with wine, 60ml dry white in before the broth is lovely and adds about 10 calories a serving.

What do I serve it with?

Our Creamy Garlic Mashed Potatoes catch the onion gravy perfectly for a 595-calorie plate. Green beans or a sharp-dressed salad keep the whole dinner under 500 — the richness is in the skillet, so the side can stay simple.
