Lightened-Up Green Bean Casserole

The Thanksgiving classic rebuilt from scratch: crisp-tender green beans in a real mushroom cream sauce made on the stove instead of poured from a can, under a proper crispy onion topping. All the nostalgia at 120 calories a serving, so it earns its spot on the plate.

Method

  1. Blanch the green beans in salted boiling water for 4 minutes, then plunge into iced water and drain well.

💡 Tip: Cold shock now means green, snappy beans later. Skip it and they bake to grey.
  2. Melt the butter in a pan over medium and cook the mushrooms hard for 5 to 6 minutes until browned. Add the garlic for 1 minute.

  3. Stir in the flour for 1 minute, then whisk in the milk and broth gradually. Simmer 3 to 4 minutes until it coats a spoon. Season.

  4. Fold the beans through the sauce in a baking dish. Mix the crispy onions with the panko and scatter over the top.

  5. Bake at 190C / 375F for 18 to 20 minutes until bubbling at the edges and golden on top.

Notes

Blanch the beans and shock them in cold water. That is what keeps them green and snappy through the bake.
The from-scratch sauce is a 10-minute job and tastes like mushrooms instead of a can.
The crispy onions are measured and mixed with panko so a little topping covers the whole dish.
Assembles a day ahead. Add the topping just before baking so it stays crisp.

Frequently Asked Questions

How does this compare to the classic can version?

The 1955 original runs 200 to 250 calories a serving, most of it condensed soup and a thick blanket of fried onions. A scratch mushroom sauce on milk and a measured onion-panko topping lands at 120 with the same flavor memory intact.

Can I make it ahead for Thanksgiving?

Yes — assemble the beans and sauce up to a day ahead and refrigerate. Bake it straight from the fridge with the topping added fresh, allowing an extra 5 to 10 minutes.

Frozen green beans?

They work in a pinch: thaw, drain hard, and skip the blanch. The texture lands softer than fresh, which some tables actually prefer.
