Golden Herb Stuffing
Proper holiday stuffing: toasted bread cubes, slow-cooked onion and celery, a heavy hand of sage and thyme, baked until the top is golden and craggy and the inside stays custardy. One measured knob of butter instead of a full stick, and nobody at the table will know.
Method
-
Preheat the oven to 180C / 350F. Spread the bread cubes in a greased baking dish.
-
Melt the butter in a pan over medium-low and cook the onion and celery gently for 10 minutes until soft and sweet. Add the garlic, sage, thyme, and salt for 1 minute.
💡 Tip: Low and slow here. Browned is fine, burnt garlic is not. -
Whisk the broth and eggs together, then pour over the bread with the vegetables and parsley. Toss until evenly soaked.
-
Rest 10 minutes so the bread drinks the custard, then level it out.
-
Bake covered with foil for 25 minutes, then uncovered for 15 to 20 minutes until golden and crisp on top.
💡 Tip: Covered keeps the inside moist, uncovered builds the top. Both stages matter.
Notes
Stale bread is the foundation. Fresh bread turns to mush, so dry the cubes in a low oven if your loaf is soft.
The vegetables cook low and slow in the butter. That sweetness is doing the work the extra butter usually does.
Dried sage and thyme are fine; double the amounts if using fresh.
The egg is the binder. Do not skip it or the stuffing bakes loose.

Frequently Asked Questions
Stuffing or dressing?
Baked in a dish, this is technically dressing — and deliberately so. Outside the bird it cooks evenly, crisps on top, and avoids the food-safety juggling of stuffing a turkey cavity.
Can I prep it ahead?
Assemble fully (minus the bake) a day ahead and refrigerate. Bake from the fridge with 10 extra covered minutes. The dried bread step can be done days in advance.
How do I make it more indulgent for the big day?
Browned turkey or chicken sausage folded through adds about 60 calories and 8g protein a serving and turns it into a side that eats like a main. The macros in this listing are the base recipe.
