Marry Me Chicken
The viral sun-dried tomato chicken that earned its name, with the cream swapped for blended cottage cheese so the silky pan sauce lands at a fraction of the fat. Seared cutlets, garlic, chili, parmesan, and spinach — proposal-worthy at 360 calories and 49 grams of protein.
Method
-
Season the cutlets with the salt and oregano and sear in the oil over medium-high, 3 to 4 minutes a side until golden and just cooked. Remove.
-
Add the sun-dried tomatoes, garlic, and chili flakes to the pan for 1 minute until fragrant.
-
Pour in the broth, scraping up the browned bits, and simmer 2 minutes.
-
Turn the heat to low. Stir in the blended cottage cheese and parmesan until the sauce is silky, then fold in the spinach to wilt.
💡 Tip: Low heat from here on. Cottage cheese sauces are glossy at a simmer and grainy at a boil. -
Return the chicken and its juices for 2 to 3 minutes, spooning the sauce over. Finish with basil.
Notes
Buy sun-dried tomatoes in oil and use a measured spoon of that oil for the searing. It is the most flavorful fat in the kitchen.
Blend the cottage cheese completely smooth before it goes anywhere near the pan.
Thin cutlets cook evenly and leave room for the sauce to be the star.
Serve over pasta, rice, mash, or greens. Macros are the chicken and sauce only.

Frequently Asked Questions
Why is this recipe everywhere?
The name and the sauce. Sun-dried tomato, garlic, parmesan, and cream over seared chicken is a genuinely great combination — the viral versions just build it on a cup of heavy cream and land near 650 calories a serving. Blended cottage cheese keeps the silk and drops the plate to 360.
Will the cottage cheese taste like cottage cheese?
No — blended smooth and melted into a parmesan-garlic pan sauce it reads as cream, the same trick as our broccoli cheddar soup and spinach alfredo. The blending step is the non-negotiable part; curds that skip the blender will show.
What should I serve it with?
Pasta is the classic: 60g dry weight per person adds about 210 calories. For a low-carb plate, mash of cauliflower or simply more spinach keeps dinner under 450. The sauce is the point, so pick something that carries it.
