Velvety Broccoli Cheddar Soup

The bread-bowl favorite without the heavy cream: broccoli and sharp cheddar in a silky base thickened with blended cottage cheese, our quiet protein trick. A third of the calories of the cafe version, and 21 grams of protein a bowl instead of 8.

Method

  1. Melt the butter in a large pot over medium and cook the onion and carrot for 5 minutes. Add the garlic for 1 minute.

  2. Stir in the flour for 1 minute, then whisk in the broth and milk gradually until smooth.

  3. Add the broccoli, smoked paprika, and salt. Simmer 12 to 15 minutes until the broccoli is tender.

  4. Blend about half the soup — in the pot with a stick blender, or a few ladles in a jug blender — and stir it back through.

💡 Tip: Half-blended is the texture target: creamy base, real florets.
  5. Off the heat, stir in the blended cottage cheese, then the cheddar a handful at a time until melted.

💡 Tip: Off the heat for both cheeses. Boiled cheddar splits into grease and string.
  6. Taste, season, and serve with black pepper and a few reserved florets on top.

Notes

Sharp or extra-mature cheddar matters. Stronger cheese means less of it carries the whole soup.
Blended cottage cheese is the body of this soup. It goes in off the boil and nobody will identify it.
Keep some broccoli florets back to stir in whole so the soup has texture.
Add shredded rotisserie chicken to make it a 35g-protein main. Track it on top.

Frequently Asked Questions

How does this compare to the cafe version?

A bread-bowl serving of the famous one runs about 900 calories once the bowl is eaten, and the soup alone is around 360 with 8g protein. This bowl is 310 with 21g, because blended cottage cheese replaces the cream base and a strong cheddar does more work per gram.

Can I make it a full dinner?

Stir in 300g of shredded cooked chicken at the end and each bowl becomes a 410-calorie, 38g-protein main. The soup also freezes well for 3 months — freeze before the cheese stage if you can, and finish fresh on reheat.

My soup went grainy. What happened?

Cheese hit too much heat. Both the cottage cheese and cheddar must go in off the boil, and reheats should be gentle. If it does split, a splash of cold milk and a quick blitz with the stick blender usually brings it back.
