Creamy Swedish Meatballs

The IKEA order rebuilt at home: tender spiced turkey meatballs in a silky brown gravy that gets its cream from a measured spoonful of light cream cheese instead of a carton of heavy cream. Warm with allspice and nutmeg, proper comfort food at 44 grams of protein a serving.

Method

  1. Mix both turkeys, panko, egg, grated onion, allspice, nutmeg, and salt until just combined, then roll into 20 meatballs with wet hands.

💡 Tip: Light hands. Compacted meatballs turn dense in the gravy.
  2. Brown the meatballs in a large nonstick pan over medium-high, turning, 6 to 8 minutes. They do not need to be cooked through yet. Remove.

  3. Melt the butter in the same pan, stir in the flour for 1 minute, then whisk in the broth gradually until smooth.

  4. Add the Worcestershire and Dijon and simmer 2 to 3 minutes until the gravy coats a spoon.

  5. Whisk in the cream cheese off the boil until silky, then return the meatballs and simmer gently 6 to 8 minutes until cooked through.

💡 Tip: Gentle simmer. A hard boil can split the gravy and toughen the meatballs.
  6. Finish with parsley and plenty of black pepper.

Notes

The two-turkey blend from our meatloaf does the work again: breast for protein, 93% for moisture.
Allspice and nutmeg are what make a meatball Swedish. Do not skip or substitute them.
Grate the onion rather than dicing so it melts into the meatballs.
Serve over mash or egg noodles. Macros cover meatballs and gravy only.

Frequently Asked Questions

How close is this to the IKEA plate?

Same flavor map — allspice-nutmeg meatballs, brown gravy, a creamy finish — at very different numbers. The restaurant plate with cream sauce runs 700+ calories before the mash; this lands at 380 with 44g of protein because the turkey blend replaces the beef-pork mix and 60g of light cream cheese replaces the cream.

What do I serve them with?

Our Creamy Garlic Mashed Potatoes are the natural partner — together they make a 590-calorie plate. Egg noodles are the other classic; 60g dry weight per person adds roughly 210 calories. A spoonful of lingonberry or cranberry sauce is traditional and worth the 30 calories.

Do they freeze?

Very well. Freeze meatballs and gravy together for up to 3 months and reheat gently on the stove with a splash of broth to loosen the gravy. The cream cheese gravy survives freezing better than a cream-based one.
