Spicy Salmon Sushi Bake

The viral deconstructed sushi roll, lightened where it counts. Seasoned sushi rice under a sriracha-yogurt salmon layer, broiled until the top catches, scooped into nori sheets like a hand roll. Feeds six from one dish and tastes like a special occasion.

Method

  1. Cook the sushi rice, then fold through the rice vinegar, sugar, and salt while hot. Press into an even layer in a baking dish.

  2. Roast the salmon at 200C / 400F for 12 to 14 minutes until it just flakes, then shred it with a fork.

    💡 Tip: Slightly underdone is fine here. It goes back under heat.
  3. Mix the shredded salmon with the yogurt, mayo, sriracha, and soy sauce, and spread it over the rice.

  4. Broil 4 to 6 minutes until the top blisters and catches in spots.

    💡 Tip: Watch it constantly. Blistered and burnt are a minute apart.
  5. Finish with furikake, spring onions, and extra sriracha. Scoop into nori sheets with cucumber to eat.

Notes

The mayo layer is the calorie trap in most sushi bakes. Splitting it between light mayo and Greek yogurt keeps it creamy at half the fat.
Do not skip seasoning the rice. Vinegar-seasoned rice is what makes it taste like sushi, not a casserole.
Broil at the end until the top gets scorched patches. That is the signature.
Serve with extra nori sheets, cucumber, and avocado. Track the avocado.
