Fall-Apart Slow Cooker Pot Roast
A lean beef roast cooked low and slow over potatoes and carrots until it shreds at the touch of a fork, with a proper gravy made from the cooking liquid. Sunday dinner energy, weekday macros: 48 grams of protein a serving.
Method

Season the roast all over with salt and pepper and sear it hard in a hot pan, 2 to 3 minutes a side, until browned.
💡 Tip: Browning is flavor you cannot add later. Get real color on it. -
Put the potatoes, carrots, onion, celery, and garlic in the slow cooker and set the roast on top.

Whisk the tomato paste into the broth with the Worcestershire and thyme, pour it over, and tuck in the bay leaves.

Cook on low for 8 hours until the beef pulls apart easily.

Move the beef and vegetables to a platter. Whisk the cornstarch slurry into the hot cooking liquid and stir until it thickens into gravy, 3 to 5 minutes.
💡 Tip: If your slow cooker does not run hot enough to thicken it, do this step in a small pan on the stove. -
Shred the beef into big pieces and serve with the vegetables and gravy.

Ask the butcher for a lean roast: bottom round, top round, or a well-trimmed chuck. Trim any surface fat yourself.
Searing the roast first is 5 minutes that pays for itself in flavor. Do not skip it.
Low for 8 hours beats high for 4. Lean cuts need the gentler ride to go tender.
The cornstarch gravy at the end is what makes it taste like Sunday.
