Sunday Turkey Bolognese

A slow-simmered ragu with the full Italian build — soffritto, tomato paste browned dark, a splash of milk for silkiness — on lean turkey. An hour on the stove turns into a sauce with real depth at a third of the fat of beef bolognese, ready for whatever pasta the week calls for.

Method

  1. Cook the onion, carrot, and celery in the oil over medium-low for 8 to 10 minutes until soft and sweet. Add the garlic for 1 minute.

💡 Tip: This is soffritto, the foundation. It should smell sweet, not browned.
  2. Turn the heat up, add the turkey, and brown it hard, breaking it up, 7 to 8 minutes.

  3. Stir in the tomato paste and cook 2 minutes until it darkens a shade.

  4. Add the crushed tomatoes, milk, broth, oregano, and bay leaves. Bring to the gentlest simmer.

  5. Simmer partially covered for 50 to 60 minutes, stirring now and then, until thick and glossy.

💡 Tip: A lazy blip of a simmer. Bolognese is braised, not boiled.
  6. Fish out the bay leaves, season, and serve over pasta with the parmesan.

Notes

The soffritto and the browned tomato paste are where the depth comes from. Rush neither.
Milk in bolognese is traditional, not a lightening trick — it rounds the acidity and silkens the turkey.
The long simmer is the recipe. Thirty minutes makes meat sauce; sixty makes ragu.
Nutrition is the sauce only. Pasta, polenta, or zoodles get tracked per meal.

Frequently Asked Questions

Milk in bolognese?

Authentic and essential — Bologna's own registered recipe includes it. It mellows the tomato and gives the sauce its rounded, silky finish; with lean turkey it matters even more. 150ml of skim does the job for the whole pot.

What are the macros with pasta?

The sauce alone is 420 calories a portion. Add 75g dry spaghetti for roughly 265 more, or use a protein pasta to push the plate past 50g protein. The sauce also stretches to 6 lighter portions over polenta or zoodles.

Does it freeze?

Bolognese might freeze better than any sauce in the catalog — 3 months in portions, and most people think it improves. Double the batch while the pot is already dirty; the hour of simmering costs the same.
