Extra-Crispy Air Fryer Chicken Tenders

The kids-menu classic with adult macros: a proper three-stage breading with pre-toasted panko and parmesan, air fried until genuinely crunchy. Fifty grams of protein per serving and a crust that cracks, no fryer involved.

Method

  1. Toast the panko in a dry pan over medium, stirring, for 3 to 4 minutes until golden. Cool, then mix with the parmesan, smoked paprika, garlic powder, and salt.

💡 Tip: Pre-toasted crumbs are the difference between beige tenders and golden ones.
  2. Set up three dishes: flour, beaten egg, and the crumb mix.

  3. Coat each tender flour, then egg, then crumbs, pressing the crumbs on firmly.

  4. Mist the basket and the tenders lightly with oil. Air fry at 200C / 400F for 10 to 12 minutes, flipping halfway, until deep golden and cooked through.

💡 Tip: Single layer, two batches if needed. Crowded tenders steam instead of crisp.
  5. Rest 2 minutes and serve with whatever dip you are tracking.

Notes

Toasting the panko in a dry pan first is the whole trick. The air fryer browns slower than oil, so the crumbs arrive pre-golden.
Flour, then egg, then crumbs, one hand dry and one hand wet, or you bread your fingers instead.
Do not crowd the basket. Two batches beat one soggy one.
Dips are where the calories hide. A Greek yogurt ranch or honey mustard keeps the plate honest.

Frequently Asked Questions

How do these compare to fast-food tenders?

A typical fried three-tender serving runs 400+ calories for about half the chicken. This serving is 175g of actual chicken breast at 405 calories with 49g of protein, because hot air replaced the oil bath and the breading is a thin, toasted shell rather than a batter jacket.

Do they work in the oven?

Yes — 220C / 425F on a wire rack over a tray for 15 to 18 minutes. The air fryer edges it on crunch, but the rack method is close behind.

Do they freeze?

Bread them raw and freeze on a tray before bagging, up to 3 months. Cook from frozen at the same temperature plus about 4 minutes, and the crust comes out as if freshly breaded.
