Slow Cooker Chicken Tinga
The smoky Mexican shredded chicken that tacos, bowls, and tostadas are built on: breasts braised in a blended chipotle-tomato sauce until they fall apart. Five minutes of prep, six portions of the leanest taco filling in the catalog at 220 calories and 36 grams of protein.
Method
-
Put everything in the slow cooker, chicken at the bottom, and cook on low 4 to 5 hours (or high 2.5 to 3) until the chicken shreds easily.
-
Lift out the chicken and the bay leaves. Blend the sauce smooth with a stick blender.
💡 Tip: The blend is the difference between tinga and chicken in salsa. Thirty seconds, done. -
Shred the chicken with two forks and stir it back through the sauce.
-
Simmer on high 10 minutes, lid off, so the chicken drinks the sauce.
-
Serve in tacos, over rice, or on tostadas with whatever toppings you are tracking.
Notes
Three chipotles is smoky-medium. Two is family-mild, four has a proper kick — the adobo sauce carries the smoke either way.
Blending the sauce before the chicken goes back in is what gives tinga its silky coated texture.
Nutrition is the filling only, so the tortillas, rice, or tostadas get tracked per meal.
This is a meal-prep anchor: one slow cooker run feeds three different dinners.

Frequently Asked Questions
What exactly is tinga?
A Puebla classic: chicken braised and shredded in a smoky chipotle-tomato sauce, traditionally eaten on tostadas with crema. It is Mexican cooking's answer to pulled pork — leaner, faster, and arguably more versatile.
How many meals does one batch make?
Six generous portions that keep 4 days refrigerated or 3 months frozen in the sauce. The classic rotation: tacos the first night, burrito bowls midweek, tinga quesadillas from the last portion — all from one cook.
No slow cooker?
Simmer everything covered on the stove for 25 minutes, or pressure cook 12 minutes with natural release — then blend, shred, and finish the same way. The slow cooker just makes it a leave-the-house recipe.
