Sheet-Pan Sausage and Peppers
The street-fair classic as a one-tray dinner: Italian chicken sausage, three colors of pepper, red onion, and baby potatoes roasted hot until everything chars at the edges, finished with a balsamic drizzle. One pan, no attention required, 390 calories a plate.
Method
-
Preheat the oven to 220C / 425F. Toss the potatoes with a third of the oil and seasoning and roast 15 minutes head start.
💡 Tip: Potatoes are the slow mover. The head start is what makes one tray work. -
Toss the sausage, peppers, and onion with the remaining oil, Italian seasoning, garlic powder, and salt.
-
Add them to the tray, spread in one layer, and roast 20 to 25 minutes, turning once, until the sausage is browned and the peppers are charred at the edges.
-
Drizzle with the balsamic and scatter the parsley straight on the tray.
-
Serve from the pan, with crusty bread or over rice if the day needs more carbs.
Notes
Chicken sausage is the macro lever here — half the fat of pork Italian sausage with the same fennel-garlic profile.
Cut the potatoes smaller than the peppers so everything finishes together.
Crowding the tray steams the veg. Use two trays if yours is small.
The balsamic goes on after roasting, not before, so it stays bright.

Frequently Asked Questions
Why chicken sausage?
Pork Italian sausage runs around 300 calories and 27g fat per link; a good chicken Italian sausage halves both with the same fennel-and-garlic character, which is the whole flavor of this dish. It is the single highest-leverage swap in the recipe.
How does it meal prep?
It was practically designed for it — portion into four containers and it reheats in 90 seconds for 4 days. The peppers soften a little by day three; the flavor only improves.
Can I add cheese or make it a sub?
A little torn mozzarella in the last 5 minutes of roasting is excellent and adds about 70 calories a serving. Piled into a roll it becomes the proper street-fair sandwich — track the roll and go in with open eyes.
