Method

  1. Boil the eggs for 8 minutes, then into iced water. Peel and quarter.

  2. Cook the bacon until crisp, drain on paper, and chop. Season the chicken with the paprika and salt and cook in the bacon pan, 6 to 7 minutes a side. Rest, then slice.

💡 Tip: The bacon pan seasons the chicken for free. Waste nothing.
  3. Whisk the oil, vinegar, Dijon, and honey with a tablespoon of water into a sharp vinaigrette.

  4. Arrange the romaine on a platter and lay the chicken, eggs, avocado, tomatoes, onion, bacon, and blue cheese in their rows.

  5. Dress at the table and toss there, or serve the rows intact and let everyone build.

Notes

Everything is in the salad on purpose, just measured: the bacon, blue cheese, and avocado are portioned so the icons stay and the fat stays sane.
Jammy 8-minute eggs beat fully hard-boiled here.
Build it in rows. A Cobb tossed in the kitchen is just a chopped salad.
All components keep separately for 4 days, making this a meal-prep sleeper.

Frequently Asked Questions

What makes a restaurant Cobb 800 calories?

Quantity, not the ingredients themselves — double bacon, half an avocado per plate, and a quarter cup of creamy dressing. This version keeps every signature component at a deliberate weight, and the vinaigrette brings acid instead of mayonnaise.

Can I swap the blue cheese?

Feta swaps evenly for a milder plate, and goat cheese works too. Keeping it at 10g a serving matters more than which cheese it is.

How does it meal prep?

As a kit: cooked chicken, bacon, eggs, and dressing hold 4 days; cut the avocado the day you eat. Assembled boxes with the dressing on the side are a legitimately exciting work lunch.
