No-Bake Peanut Butter Protein Bars

Five minutes of mixing, one hour in the fridge, and a tray of chewy peanut butter bars with a dark chocolate drizzle that cost a fraction of the wrapped kind and read like a treat. Thirteen grams of protein a bar from whey and real peanut butter, no chalk in sight.

Method

  1. Line a 20cm / 8-inch square tin with parchment.

  2. Stir the oats, protein powder, and salt together.

  3. Warm the peanut butter and honey together until pourable, then mix into the dry ingredients with the milk and vanilla until it comes together like cookie dough.

💡 Tip: Judge by feel, not the clock. Protein powders absorb differently; the milk is your adjustment dial.
  4. Press firmly and evenly into the tin — the harder you press, the better they hold.

  5. Drizzle with the melted chocolate and refrigerate at least 1 hour before cutting into 10 bars.

Notes

Natural peanut butter, the drippy just-peanuts kind, binds best. Stiff set PB needs 20 seconds in the microwave first.
The mix should feel like cookie dough. Too dry, add milk a teaspoon at a time; too wet, more oats.
Cut 10 bars for the stated macros. Cutting 12 slightly smaller works fine, just re-divide.
These live in the fridge. At room temperature they soften; from frozen they are a different, excellent snack.

Frequently Asked Questions

How do these stack up against store-bought bars?

A typical wrapped protein bar is 200 to 250 calories with 20g protein and an ingredient list in small print. These are 230 with 13g from six ingredients you can pronounce, at roughly a third of the unit price. If you need the full 20g, have one with a glass of milk.

Can I use a plant protein powder?

Yes, with an extra splash of milk — plant proteins drink more liquid. Collagen also works and makes a softer, chewier bar.

How long do they keep?

Two weeks in a sealed container in the fridge, three months frozen with parchment between layers. Frozen, they thaw in a lunchbox by mid-morning.
