Method

  1. Heat the oil in a large frying pan or wok over medium-high heat.

  2. Add the ground beef and cook until browned, breaking it apart as it cooks.

  3. Stir in the onion, garlic, and ginger, cooking for another 2–3 minutes until fragrant.

  4. Add the vegetables and continue cooking until tender but still slightly crisp.

  5. In a small bowl, mix together the soy sauce, rice vinegar, and honey.

  6. Pour the sauce into the pan and stir everything together until evenly coated and heated through.

  7. Serve immediately with your choice of rice, noodles, or vegetables.

Notes

Allow the stir fry to cool before transferring to airtight containers.
Store in the fridge for up to 4 days.
You can also freeze portions for up to 2 months if needed.
Swap the beef for turkey, chicken, or tofu, or adjust the spice level with chilli flakes or sriracha.
