Egg Roll in a Bowl
Everything good about an egg roll, minus the deep-fried wrapper. Lean ground pork, a mountain of cabbage and carrot, and a savory ginger-garlic sauce, all in one skillet in 20 minutes. Low carb, big volume, and one of the easiest meal preps in the catalog.
Method

Heat the oil in a large skillet over medium-high. Brown the ground pork hard, breaking it up, for 5 to 6 minutes.

Add the onion, garlic, and ginger and cook for 2 minutes.

Add the cabbage and carrots with the soy sauce, vinegar, and sriracha. Stir-fry for 4 to 5 minutes until the cabbage is wilted but still has bite.
💡 Tip: Pull it while the cabbage still has crunch. It keeps cooking in the residual heat. -
Serve topped with scallions, sesame seeds, and extra sriracha.
