20-Minute Chicken Fried Rice

Takeout fried rice with the ratio flipped: heavy on chicken and egg, sensible on rice, and one measured tablespoon of oil instead of the ladleful the restaurant uses. Day-old rice and a screaming hot pan do the rest. Twenty minutes, one wok, done.

Method

  1. Whisk the eggs and egg whites. Heat a third of the oil in a very hot wok, scramble the eggs until just set, and remove.

    💡 Tip: Slightly underdone is right. They go back in at the end.
  2. Add another third of the oil and stir-fry the diced chicken for 4 to 5 minutes until cooked and picking up color. Remove with the eggs.

  3. Add the last of the oil with the scallion whites, garlic, and ginger for 30 seconds, then the peas and carrots for a minute.

  4. Add the chilled rice, breaking up any clumps, and stir-fry for 2 to 3 minutes until every grain is hot and starting to catch.

    💡 Tip: Press the rice against the hot wok and let it sit for 20 seconds at a time. That contact is where the toasty flavor comes from.
  5. Return the chicken and eggs, pour over the soy, oyster sauce, and white pepper, and toss everything for a final minute. Finish with the scallion greens.

Day-old chilled rice is non-negotiable. Fresh rice steams and clumps, chilled rice fries and separates.
Eggs plus egg whites push the protein while keeping the fat sensible.
Have everything prepped and next to the stove. The cooking takes minutes and there is no time to chop.

Freshly cooked rice is full of surface moisture, so it steams into a sticky mass. Chilled overnight, the grains dry and firm up, which is what lets them fry and stay separate. Cook the rice the night before, or spread fresh rice on a tray and chill it for an hour minimum.

How is this leaner than takeout fried rice?

Can I use leftover protein?
