Method

  1. Mix the sage, crushed fennel, smoked paprika, and garlic powder into the ground turkey. Brown it in the oil over medium-high, breaking it up, until cooked through and taking on color. Add the bell pepper for the last 3 minutes, then tip into a bowl.

💡 Tip: The fennel is what makes turkey taste like breakfast sausage. Crush the seeds lightly to wake them up.
  2. Whisk the eggs and egg whites with salt and pepper. Scramble gently in the same skillet over medium-low until just set and still glossy.

💡 Tip: Pull the eggs slightly early. They finish cooking in the residual heat and again when reheated.
  3. Let everything cool for 10 minutes. Lay out the tortillas and divide the turkey, eggs, black beans, cheese, and salsa between them.

💡 Tip: Cooling first stops the tortillas steaming, which is what keeps frozen burritos from going soggy.
  4. Fold in the sides and roll each burrito tightly. Wrap individually in foil and freeze for up to 3 months, or refrigerate for 4 days.

💡 Tip: A tight roll and individual wrapping are what make these grab-and-go.

Notes

Seasoning ground turkey with sage, fennel, and smoked paprika turns it into breakfast sausage without the sausage fat. Do not skip the fennel, it is the flavor that reads as sausage.
Eggs plus egg whites keeps the scramble big and fluffy while holding the fat down.
Cool the filling before rolling. Hot filling steams the tortilla and makes freezer burritos soggy.
Wrap individually in foil, freeze up to 3 months. Reheat unwrapped in the microwave for 90 seconds to 2 minutes, or in a 375F oven in the foil for 20 minutes.

Frequently Asked Questions

How do I reheat them?

From frozen: unwrap, wrap in a damp paper towel, and microwave 90 seconds to 2 minutes, flipping halfway. Or keep the foil on and bake at 375F for about 20 minutes. From the fridge, halve those times.

Why not just use breakfast sausage?

Store sausage is typically 20 to 30% fat. Seasoning lean ground turkey with sage, fennel, and smoked paprika gives you the same flavor profile at a third of the fat.

Can I customize the filling?

Freely. Sauteed mushrooms, spinach, or hash browns all work. Just cook off any moisture first and keep total filling volume similar so they still roll tight.
