One-Pan Beef and Gnocchi
Pillowy gnocchi crisped in the pan, then simmered with lean ground beef in a rich tomato sauce and finished with creamy cottage cheese dollops instead of cream. It eats like lasagna, cooks like a 30-minute skillet, and washes up like a single pan, because it is one.

Heat half the oil in a large ovenproof skillet over medium-high. Add the gnocchi straight from the packet and crisp for 5 to 6 minutes, tossing occasionally, until golden. Remove and set aside.
💡 Tip: No boiling. Pan-crisping straight from the packet gives golden, chewy edges that survive the sauce. -
Add the remaining oil and brown the ground beef hard, breaking it up. Add the onion and garlic for 3 to 4 minutes, then stir in the oregano and red pepper flakes.

Pour in the marinara, return the gnocchi, and simmer for 5 minutes. Stir the spinach through until wilted and season.

Dollop the cottage cheese over the top, scatter with parmesan, and broil for 2 to 3 minutes until golden in spots. Serve straight from the pan.
