Quick Chicken Ramen

Weeknight ramen that eats like it took hours: a miso-soy broth with real depth, shredded chicken poached right in the pot, jammy soft-boiled eggs, and spinach wilted at the end. Instant noodles, minus their sodium-bomb flavor packet, keep it a 25-minute job.

Method

  1. Soft-boil the eggs: 6 and a half minutes in boiling water, then straight into ice water. Peel and halve.

    💡 Tip: Six and a half minutes, jammy. Seven and a half, fudgy. Beyond that you have made a picnic egg.
  2. Bring the stock to a simmer with the garlic, ginger, and soy sauce. Add the chicken breasts and mushrooms and poach gently for 12 to 14 minutes until the chicken is cooked through.

    💡 Tip: A gentle simmer, never a boil. Boiled chicken breast turns to rubber.
  3. Lift out the chicken, shred it with two forks, and return it to the pot. Ladle a little hot broth into a bowl, whisk in the miso until smooth, and stir it back in off the boil.

    💡 Tip: Miso is added off the boil to keep its flavor alive.
  4. Cook the noodles in the broth for 2 to 3 minutes, stirring in the spinach for the final minute. Serve topped with the egg halves, scallions, and sesame seeds.

Notes

Bin the flavor packets. The noodles themselves are fine, it is the packet carrying the sodium mountain.
Poaching the chicken directly in the broth seasons both at once.
Miso goes in at the end, off the boil. Hard boiling kills its aroma and its good bacteria.
Six and a half minutes gets you jammy eggs. Straight into ice water or they keep cooking.

How do I store leftovers?

Store broth and noodles separately or the noodles bloat and drink the broth. Kept apart, everything is good for 3 days. Cook eggs fresh, they do not keep well peeled in broth.
