Singapore Noodles with Shrimp

Golden curry-scented rice vermicelli tossed with plenty of shrimp, egg, and crisp vegetables. The takeout classic usually arrives greasy, ours gets its color from curry powder blooming in one measured spoon of oil, and its protein from doubling the shrimp and adding egg. Ready in 25 minutes.

Method

  1. Soak the vermicelli in just-boiled water for 3 to 4 minutes until pliable but firm. Drain and snip a few times with scissors.

    💡 Tip: Pliable, not soft. It finishes cooking in the wok.
  2. In a very hot wok with a third of the oil, cook the shrimp for 2 minutes until just pink. Remove. Scramble the eggs roughly in another third and remove with the shrimp.

  3. Add the last of the oil with the curry powder and turmeric for 30 seconds until fragrant, then stir-fry the onion, pepper, and garlic for 2 minutes.

    💡 Tip: Blooming the curry powder in oil is the entire difference between golden and dusty.
  4. Add the noodles, soy, and fish sauce and toss until evenly yellow and hot. Return the shrimp and eggs, add the bean sprouts, and toss for a final minute. Serve with scallions and lime.

    💡 Tip: Tongs beat a spatula here. Lift and toss rather than stir.

Notes

Soak the vermicelli until just pliable, it finishes in the wok. Oversoaked noodles snap into fragments.
Bloom the curry powder in the oil for 30 seconds. Raw curry powder tastes dusty, bloomed it tastes like the restaurant version.
Shrimp cook in 2 minutes. Pull them early and return them at the end.
Work fast and keep everything moving, this dish is 10 minutes of full attention.

No, they are a Cantonese invention from Hong Kong's cha chaan teng cafes, named for the exotic association with the spice trade. Singapore itself has no such dish, which does not make it any less delicious.

Why is my version always greasy from takeout?

Vermicelli is absorbent, so restaurants use a lot of oil to keep it moving in the wok. One measured tablespoon plus fast tossing does the same job at home.

Can I swap the protein?

Diced chicken breast, char siu-style pork, or firm tofu all work. Chicken needs 4 to 5 minutes where shrimp take 2.
