Stars & Stripes Watermelon Feta Salad
A vibrant, summery salad combining sweet watermelon, crisp cucumber, creamy feta and fresh mint, tossed with a tangy honey vinaigrette. Perfect for Fourth of July gatherings, this colourful side dish is refreshing and ideal alongside barbecue favourites for any warm-weather celebration.
Method
-
In a small bowl, whisk together the red wine vinegar, honey, salt, and pepper. Slowly drizzle in the olive oil while whisking until the dressing is smooth and emulsified.
-
Add the watermelon, cucumber, feta, and red onion to a large serving bowl.
-
Pour about half of the dressing over the salad and gently toss until everything is lightly coated.
-
Refrigerate for at least 20 minutes to allow the flavours to come together.
-
Just before serving, sprinkle over the chopped mint and drizzle with the remaining dressing.
-
Serve chilled alongside your favourite barbecue dishes.
Notes
Prepare the salad and dressing separately, then combine up to 2 hours before serving for the best texture.
Fold in mint and drizzle the remaining dressing just before serving for freshness.
Store leftovers in an airtight container in the fridge for up to 2 days; stir gently to redistribute any liquid before serving.

Frequently Asked Questions
Can I make this the day before?
It's best enjoyed the same day, but you can prepare the dressing and chop the ingredients ahead of time. Combine everything shortly before serving for the freshest texture.
What type of feta works best?
A block of feta packed in brine provides the best flavour and texture. Simply cube or crumble it before adding to the salad.
Can I make it spicy?
Yes. Thinly sliced jalapeños or a pinch of Aleppo pepper add a subtle kick that pairs beautifully with the sweet watermelon.
Can I use another herb instead of mint?
Absolutely. Fresh basil is a fantastic alternative and gives the salad a slightly different but equally refreshing flavour.
How do I keep the salad from getting watery?
Prepare the dressing and salad ingredients separately, then toss them together no more than 2 hours before serving. If watery, gently drain off excess liquid and toss again before serving.
