Stars & Stripes Watermelon Feta Salad

Method

  1. In a small bowl, whisk together the red wine vinegar, honey, salt, and pepper. Slowly drizzle in the olive oil while whisking until the dressing is smooth and emulsified.

  2. Add the watermelon, cucumber, feta, and red onion to a large serving bowl.

  3. Pour about half of the dressing over the salad and gently toss until everything is lightly coated.

  4. Refrigerate for at least 20 minutes to allow the flavours to come together.

  5. Just before serving, sprinkle over the chopped mint and drizzle with the remaining dressing.

  6. Serve chilled alongside your favourite barbecue dishes.

Prepare the salad and dressing separately, then combine up to 2 hours before serving for the best texture.
Fold in mint and drizzle the remaining dressing just before serving for freshness.
Store leftovers in an airtight container in the fridge for up to 2 days; stir gently to redistribute any liquid before serving.
