Turkey Sloppy Joes

The messy childhood classic, rebuilt with 99% lean ground turkey and a from-scratch sauce that skips the sugar bomb. Grated carrot melts into the sauce for body and a touch of natural sweetness, and it all piles onto a toasted bun in 25 minutes. Weeknight gold, and even better as leftovers.

Method

  1. Heat the oil in a large skillet over medium-high. Brown the ground turkey, breaking it up, for 5 to 6 minutes until it takes on color.

    💡 Tip: Let it brown properly rather than just turning pale. That color is flavor, especially with lean turkey.
  2. Add the onion, bell pepper, grated carrot, and garlic, and cook for 4 to 5 minutes until softened.

  3. Stir in the tomato paste and cook for a minute, then add the crushed tomatoes, Worcestershire, balsamic, chili powder, smoked paprika, and mustard.

    💡 Tip: Cooking the tomato paste briefly takes off its raw edge and deepens the whole sauce.
  4. Simmer uncovered for 8 to 10 minutes until thick enough to sit on a bun without running everywhere. Season well.

    💡 Tip: It should mound on a spoon. Too loose and the bun pays the price.
  5. Pile onto toasted buns and serve with pickles or slaw.

Notes

99% lean ground turkey keeps the fat low. If you use 93%, brown it well and drain before the sauce goes in.
The grated carrot is the quiet hero. It melts into the sauce, adds body and natural sweetness, and nobody will spot it.
No added sugar here. Tomato paste, balsamic, and Worcestershire build the sweet-tangy balance instead.
