Method

  1. Combine the ground chicken, chopped spinach, grated onion half, garlic, smoked paprika, onion powder, oregano, salt, and pepper. Mix well and shape into 4 patties. Chill for 15 minutes if you have time.

  2. Heat the grill or a grill pan to medium-high and oil the grates well.

  3. Grill the patties for 5 to 6 minutes per side, flipping once, until charred outside and 165F in the middle.

  4. Stir the mustard into the Greek yogurt. Build the burgers on toasted buns with the sauce, lettuce, tomato, and sliced onion.
