Lighter Turkey Lasagna
Proper lasagna, lightened where it counts. Lean ground turkey in a rich tomato sauce, layers of no-boil noodles, and a silky blended cottage cheese layer standing in for ricotta, which quietly doubles the protein. It slices clean, freezes beautifully, and nobody at the table will call it diet food.

Heat the oven to 375F. Brown the turkey in the oil over medium-high, breaking it up, then add the onion and garlic for 4 minutes. Stir in the marinara, tomato paste, oregano, and basil and simmer 10 minutes. Stir the spinach through until wilted and season.
💡 Tip: Simmer until the sauce is loose but not watery. No-boil noodles drink up liquid as they bake. -
Blend the cottage cheese until completely smooth, then stir in the egg, parmesan, and garlic powder.
💡 Tip: Totally smooth is the goal. This layer is doing ricotta's job with double the protein. -
In a 9x13 dish, layer: a third of the meat sauce, noodles, half the cottage cheese mixture, and repeat, finishing with meat sauce and the mozzarella on top.

Cover with foil and bake 40 minutes. Uncover and bake 10 to 15 more until golden and bubbling. Rest 15 minutes before slicing.
💡 Tip: The rest is not optional. It is what lets the slices hold their shape.

Blend the cottage cheese completely smooth. That is what makes it read as a creamy ricotta layer rather than lumpy cottage cheese.
No-boil noodles save a pot and work perfectly as long as the sauce is not too thick. Loosen it with a splash of water if needed.
Let it rest 15 minutes after baking. Cutting early is how lasagna slides apart.
