Crispy Chicken Quesadillas
Golden, crispy quesadillas stuffed with taco-spiced chicken, peppers, and melted cheese, without the grease slick. High-fiber tortillas, a measured hand with the cheese, and a swipe of seasoned Greek yogurt inside keep each one over 40g of protein. The pan does the crisping, no deep oil required.
Method

Toss the diced chicken with the cumin, chili powder, garlic powder, smoked paprika, salt, and pepper. Cook in the oil over medium-high for 5 to 6 minutes until cooked through. Add the pepper and onion for the last 3 minutes. Remove from the pan.

Mix the Greek yogurt with the salsa.
💡 Tip: This is the creamy layer. It does what a mountain of cheese usually does, for a fraction of the fat. -
Spread a quarter of the yogurt-salsa over half of each tortilla, then top with a quarter of the chicken mixture and a quarter of the cheese. Fold over.

Cook each quesadilla in a dry or lightly sprayed pan over medium heat for 2 to 3 minutes per side, pressing gently, until golden and the cheese has melted. Cut into wedges and serve.
💡 Tip: Medium heat, not high. You want the cheese melted by the time the outside is golden.

High-fiber, low-carb tortillas are the quiet upgrade here. They crisp well and push the fiber right up.
The Greek yogurt inside melts into the filling like a creamy layer, so you need less cheese for the same richness.
A dry pan or a light spray of oil is enough. Quesadillas crisp from contact, not from swimming in oil.
Press gently with a spatula as they cook for even browning and a properly fused filling.
