Macro-Friendly Insta Pot Beef Stroganoff

A hearty and creamy beef stroganoff made healthier using lean beef sirloin, mushrooms, and non-fat Greek yogurt. This comforting dish is perfect for a satisfying and protein-packed dinner made quickly in an Instant Pot.

Method

  1. Set IP on sauté function, use the olive oil to sauté onion until soft, about a couple minutes.

  2. Add salt and pepper to the beef and add that to brown on all sides for about two to three more minutes.

  3. Add garlic until fragrant and then add the soy sauce and deglaze the bottom of the pan.

  4. Add mushrooms and flour and mix until evenly incorporated.

  5. Add the broth of choice. Close lid. Set Instant Pot to high pressure for 10 to 15 minutes.

  6. When complete, use quick release method and add noodles. Stir to mix.

  7. Set pressure back up to five minutes on high. Use natural pressure release for five minutes and then quick release method to finish.

  8. Finally add Greek yogurt and mix to incorporate evenly.

  9. Serve and enjoy!
