Recipe for Macro-Friendly Insta Pot Beef Stroganoff
Ingredients
- 700g Beef sirloin or stew
- 454g Mushroom of choice (we recommend a mix of Bella and white)
- 1/2 Onion or more approx 175g
- Olive oil 30g (2 tablespoons)
- Beef or chicken broth 720g
- Egg noodles one pack (340g)
- Garlic minced 1.5 tsp
- Soy sauce 30g
- Flour 30g
- Non fat Greek yogurt plain 170g
- Salt, pepper to taste and 1/2 tsp thyme for seasoning
Method
- Set IP on sauté function, use the olive oil sauté onion until soft a couple minutes.
- Add salt and pepper to the beef and add that to brown on all sides for about two to three more minutes.
- Add garlic until fragrant and then add the soy sauce and deglaze the bottom of the pan.
- Add mushrooms and flour and mix until evenly incorporated.
- Add the broth of choice. Close lid. Set Insta pot to high pressure 10 to 15 minutes.
- When complete, use quick release method and add noodles. Stir to mix.
- Set pressure back up to five minutes on high. Use natural pressure release for five minutes and then quick release method to finish.
- Finally add Greek yogurt and mix to incorporate evenly.
- Serve and enjoy!
