Method

  1. Pat the prawns dry with kitchen paper and place them in a large mixing bowl.

  2. Add the lime juice, coconut aminos, sriracha, and honey. Toss until the prawns are evenly coated.

  3. Cover and refrigerate for 30 minutes to marinate.

  4. If using wooden skewers, soak them in water while the prawns marinate.

  5. Thread the prawns onto the skewers.

  6. Preheat a barbecue or grill pan to medium heat. Lightly oil the cooking surface if needed.

  7. Place the skewers onto the grill and brush over any remaining marinade.

  8. Cook for approximately 3 minutes on each side, or until the prawns are pink, opaque, and cooked through.

  9. While the prawns cook, stir together the avocado mayonnaise, sriracha, and honey in a small bowl until smooth.

  10. Transfer the cooked skewers to a serving platter.

  11. Drizzle over the sriracha mayo or serve it on the side for dipping.

  12. Finish with chopped fresh parsley and serve immediately.

Notes

Larger prawns stay juicier on the grill than smaller varieties.

Frozen prawns can be used but should be fully thawed and patted dry before marinating.

The sriracha mayo can be prepared up to 3 days in advance.

Serve with rice, salad, grilled vegetables, or corn on the cob for a complete summer meal.

Frequently Asked Questions

Can I use frozen prawns instead of fresh?

Yes, frozen prawns work wellβ€”just make sure they're fully thawed and thoroughly patted dry before marinating for best flavor and texture.

What can I substitute for coconut aminos?

Low-sodium soy sauce is a perfect substitute if you don't have coconut aminos. Tamari also works for a gluten-free option.

How far in advance can I make the sriracha mayo?

You can prepare the sriracha mayo up to 3 days ahead. Store it in an airtight container in the refrigerator until ready to use.

Are these skewers suitable for people with shellfish allergies?

No, these are prawn-based and not suitable. For a shellfish-free alternative, consider using marinated chicken pieces or firm tofu instead.

What if I don’t have a barbecue or grill pan?

You can cook the skewers under a broiler (grill) in your oven. Place them on a foil-lined tray and broil on high, turning once, until the prawns are pink and opaque.

How do I prevent wooden skewers from burning?

Soak wooden skewers in water for at least 30 minutes while the prawns marinate; this helps prevent burning during grilling.
