Uncle Sam’s Fried Pickle Dip

Method

  1. Blend the cottage cheese in a food processor or blender until completely smooth.

  2. Transfer the blended cottage cheese to a large mixing bowl.

  3. Add the Greek yogurt, softened cream cheese, pickle juice, garlic powder, onion powder, salt, and black pepper. Stir until smooth.

  4. Fold in the chopped pickles, celery, and fresh dill until evenly distributed.

  5. Heat a small frying pan over medium heat. Add the melted butter followed by the panko breadcrumbs. Cook for 2 to 3 minutes, stirring frequently, until the breadcrumbs are golden brown. Remove from the heat and allow them to cool.

  6. Cover the dip and refrigerate for at least 30 minutes to allow the flavours to develop.

  7. Just before serving, sprinkle the toasted breadcrumbs over the top for extra crunch.

Notes

Pat the chopped pickles dry with kitchen paper before mixing them into the dip to prevent excess moisture.

The dip can be made up to one day in advance.

Keep the toasted breadcrumbs separate until serving so they stay crisp.

Store leftovers in an airtight container in the refrigerator for up to 4 days.
