Healthy Pumpkin Oatmeal Bars

A wholesome and tender pumpkin oatmeal bar bursting with warm spices and vanilla flavors. Perfect as a nutritious snack or breakfast treat, topped with a smooth, lightly sweetened cream cheese frosting.

Method

  1. Preheat the oven to 350F and spray an 8×8 baking dish with cooking spray or line with parchment paper.

  2. In a small bowl, mix together all the dry ingredients.

  3. In a separate, medium sized bowl, whisk the eggs. Add the vanilla, syrup and milk and whisk until combined.

  4. Add the dry ingredients to the wet ingredients and mix together well.

  5. Pour batter into the prepared baking dish.

  6. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

  7. When cooked, take out, and allow to cool completely before putting on glaze (optional).

  8. To make frosting: Beat or whisk all the ingredients together with a hand mixer, adding more milk to get the desired consistency.

  9. Drizzle glaze all over the Pumpkin Oatmeal Bake or save to drizzle for each serving.
