Recipe for High-Protein White Turkey Chili Verde

Ingredients
  • 1 C low sodium chicken broth
  • 1 C salsa verde (Herdez or Trader Joes)
  • 1 can cannellini beans (drained)
  • 1 small onion
  • 2 garlic gloves
  • 1/2 tsp cumin
  • 16oz package of 93/7 ground turkey

*This will make an 1161g batch (110P 32F 86C) which serves 4 portions. 

Method
  1. Sauté diced onion and minced garlic with cooking spray
  2. Add the turkey chopping it until it’s cooked through.
  3. Add cumin, broth, salsa, and beans.
  4. Bring to a boil then let simmer for about 10 min.
  5. As it’s simmering, take a fork and smash at least 1/3 of the beans to help thicken the sauce.
  6. Serve with steamed rice or a side of your choice. Enjoy!
