Recipe for High Fiber Zoats
Ingredients
- 1/4c (20g) rolled oats
- 1/4c (60ml) water
- 100g grated zucchini or riced cauliflower
- 1 egg white (46g)
Method
- In a microwave-safe bowl, mix the oats and water. Microwave for ~ 1:00 until it’s fluffed up a bit.
- Stir in the zucchini/cauliflower and egg whites. Microwave for another minute (microwave temps vary). Keep stirring and fluffing it up until it reaches your desired consistency.
- Top with any fruit, nuts, chocolate chips, syrups, etc.
