Recipe for High Fiber Zoats

Ingredients
  • 1/4c (20g) rolled oats
  • 1/4c (60ml) water
  • 100g grated zucchini or riced cauliflower
  • 1 egg white (46g)
Method
  1. In a microwave-safe bowl, mix the oats and water. Microwave for ~ 1:00 until it’s fluffed up a bit.
  2. Stir in the zucchini/cauliflower and egg whites. Microwave for another minute (microwave temps vary). Keep stirring and fluffing it up until it reaches your desired consistency.
  3. Top with any fruit, nuts, chocolate chips, syrups, etc.
