Salmon Burgers

Crispy, golden salmon burgers from pantry-staple canned salmon, bound with oats instead of breadcrumbs and finished with a lemon-dill yogurt sauce. Omega-3s, big protein, and a 25-minute clock. Budget seafood has never looked this good on a bun.

Method

  1. Flake the drained salmon into a bowl, checking for any large bones. Add the eggs, blended oats, scallions, lemon zest, half the lemon juice, dill, garlic powder, smoked paprika, salt, and pepper. Mix and shape into 4 patties. Chill 15 minutes if time allows.

    💡 Tip: The soft bones in canned salmon are edible and full of calcium, but pick out any large ones.
  2. Stir together the yogurt, dill, mustard, and remaining lemon juice for the sauce. Season and chill.

  3. Heat the oil in a skillet over medium. Cook the patties 3 to 4 minutes per side until deeply golden and cooked through.

    💡 Tip: Medium heat and patience. Flipping early is how salmon burgers fall apart.
  4. Build on toasted buns with lettuce and a generous spread of the lemon-dill sauce.

Canned salmon is the budget hero here, and the soft bones are edible and packed with calcium. Use fresh cooked salmon if you prefer.
Blended oats bind the patties without breadcrumbs and hold moisture in.
Chill the shaped patties for 15 minutes if you can. They firm up and flip cleanly.
