Method

  1. Preheat oven to 350F.

  2. In a bowl, mash with a fork until mostly creamy: 1 overripe banana (approx 100g).

  3. Add peanut butter, protein powder, and whole oats, and stir well with a wooden spoon.

  4. Add in chocolate chips, walnuts, and shredded coconut, and stir well until evenly distributed.

  5. Drop by the spoonful onto a cookie sheet lined with parchment paper.

  6. Bake for 9 minutes.

  7. Cool on wire rack.
